Savoir-Faire

Hand-harvested grapes undergo a precise sorting process before fermentation with indigenous yeasts in temperature-controlled stainless steel tanks. The winery emphasizes gentle extraction, avoiding excessive manipulation. Then L’Aurage spends 18-20 months in oak, which is 100% new, from the Radoux cooperage. This approach, coupled with Mitjavile's expertise, yields wines that showcase the unique terroir, characterized by richness, depth, and a harmonious balance of fruit, tannins, and minerality.
